Ammonium bicarbonate, also known as Volta salt, is an inorganic chemical compound denoted as NH4HCO3. It is a white, crystalline substance that dissolves in water and absorbs heat, causing an abrupt fall in temperature. Ammonium bicarbonate has a faint ammonia odor and is mainly used as a raising agent in baking. This is because it breaks down into carbon dioxide, water, and ammonia under the influence of heat, which helps dough to rise. As ammonia evaporates during baking, it does not leave an undesirable aftertaste in the finished product. Ammonium bicarbonate is also used in the production of fire extinguishing powders and as a fertilizer ingredient.
